Ironbark honey is a light mellow table honey – Often considered as the Ideal Eucalypt Honey.
It has the Iconic Australian Eucalypt taste and Aroma and stays liquid for extended periods of time before candying – ideal for all occasions.
Ironbark is great for having on toast, cereal or in drinks and Kids always love it!
Tea tree Mixed Blossom Honey is a Coastal Honey containing Tea Tree (Melaleuca quinquenervia) along with Banksia, Swamp Mahogany and a plethora of other coastal heathland nectars.
It is a darker and more flavoursome honey often used in cooking and warm drinks and taken for the health benefits it is renowned for providing.
Tea Tree honey candies easily but this can be reversed with gentle warming.

Jellybush honey produced from the Leptospermum family of plants is a full-flavoured honey better known as “MANUKA”. OUR local Jellybush honey gets it extremely high BIOACTIVE ratings from the Leptospermum Polygalifolium nectar which contains high amounts of Methylglyoxal (MGO). This honey is renowned for its Antibacterial, Antimicrobial and anti-inflammatory properties and is often taken internally as well as applied externally to skin and wounds. This batch is rated MGO100+ which equivalent to NPA5+ or UMF5+
Creamed Honey is made by us “Seeding” a batch or our Ironbark honey with 10% creamed honey from the last batch, and then gently folding the batch in our creaming machine for an extended period of time (30 mins a day over days or weeks) until the new batch begins rapid crystallization. It is then poured into its containers and allowed to set at (Ideally 13 degrees C) low temperatures for a few more weeks. When it is ready it is velvety smooth textured and stays in this fine-grained candy state until eaten or melted. Incredible. Because of this we make all of our year’s creamed honey during the cold Elands hinterland winter.
